Chicken Salad Sandwich
Ingredients
- 2 (6 3/4 ounce) cans chunk style chicken
- 1/3 c. mayonnaise or possibly salad dressing
- 1/4 c. bacon and tomato or possibly lowfat sour cream and bacon salad dressing
- 1 1/2 c. shredded Swiss cheese
- 1 sm. tomato, minced
- 1 (1 pound) loaf unsliced pumpernickel or possibly rye bread
- Leaf lettuce
Directions
- Drain and flake chicken. In a medium mixing bowl, stir together mayonnaise and salad dressing. Add in chicken, cheese and tomato. Toss lightly to mix.To assemble, cut bread into 1/2 inch thick slices by cutting from the top to, but not through, the bottom forming pockets. Line the first pocket with lettuce; then line every other pocket. Spoon chicken into lettuce-lined pockets.
- To serve, cut into sandwiches by cutting apart unfilled pockets. Makes 6 to 8 servings.
