• Chicken Rice Stir Fry

    • 1 pound chicken breast, cubed
    • 1 1/2 c. long grain rice, cooked
    • 1 pkg. stir fry seasoning
    • 3/4 c. water
    • 2 cloves garlic, chopped
    • 1/2 rib celery, chopped
    • 1/2 med. onion, chopped
    • 1/4 c. chopped cabbage
    • 2 scrambled Large eggs
    • 2-3 tbsp. oil


    1. Use a non stick skillet or possibly wok. Over medium heat saute/fry chicken breast using 1 Tbsp. oil; remove chicken. Saute/fry chopped garlic, celery, onion and cabbage till soft. Remove and scramble 2 Large eggs, using additional oil as needed. Add in sauteed chicken breast and sauteed vegetables to scrambled Large eggs; sprinkle stir fry seasoning over these ingredients and add in the 3/4 c. water. Stir mix well to coat with seasoning. Add in 1 1/2 c. cooked rice. Mix well. Can use soy sauce to suit one's taste. Other vegetables can be substitute. I use what I have on hand. Serves 6-8.
