Chicken Potato Soup
Ingredients
- 2 tbsp. butter
- 1 tbsp. chopped onion
- 1 can clear chicken broth
- 1 can boned chicken
- 3 potatoes, minced
- 1/4 can evaporated lowfat milk
Directions
- Heat butter in deep saucepan. Add in onion; cook till onion is tender but not brown. Add in chicken broth, chicken and potatoes; cover. Cook for 25 min or possibly till potatoes are tender. Add in lowfat milk. Mash 1 or possibly 2 pcs of potato with spoon; stir well. Yields: 3 servings.
