    This recipe is always very well received and in my own humble opinion, divine!

    Ingredients

    • Marinade
    • 1 cup of sunflower oil
    • 1/2 cup tomato sauce
    • lemon juice - about 1/2 a lemon's worth
    • 1 onion cleaned and finely diced
    • salt and pepper to taste
    • 1 teaspoon peri-peri
    • chicken pieces - I prefer thighs - 2 or more per person
    • butter - about 1 good Tablespoon

    Directions

    1. Place chicken portions in a single layer in oven proof dish.
    2. Mix all the sauce ingredients (oil, tomato sauce, lemon juice, onion, salt and pepper and peri-peri sauce) together and pour over chicken.
    3. Marinade for at least 6 hours or overnight if possible, turning meat at regular intervals.
    4. Bake at 180 C / 360 F covered, for about 1 hour or until chicken is tender.
    5. At this point check seasoning and adjust to taste.
    6. Removed chicken from sauce and place under grill to brown if liked.
    7. Add a good 'blob' (1 Tblsp) of butter to the sauce, replace chicken and serve on bed of fluffy rice with a crispy side salad.
