CHICKEN PERI PERI
This recipe is always very well received and in my own humble opinion, divine! Ingredients
- Marinade
- 1 cup of sunflower oil
- 1/2 cup tomato sauce
- lemon juice - about 1/2 a lemon's worth
- 1 onion cleaned and finely diced
- salt and pepper to taste
- 1 teaspoon peri-peri
- chicken pieces - I prefer thighs - 2 or more per person
- butter - about 1 good Tablespoon
Directions
- Place chicken portions in a single layer in oven proof dish.
- Mix all the sauce ingredients (oil, tomato sauce, lemon juice, onion, salt and pepper and peri-peri sauce) together and pour over chicken.
- Marinade for at least 6 hours or overnight if possible, turning meat at regular intervals.
- Bake at 180 C / 360 F covered, for about 1 hour or until chicken is tender.
- At this point check seasoning and adjust to taste.
- Removed chicken from sauce and place under grill to brown if liked.
- Add a good 'blob' (1 Tblsp) of butter to the sauce, replace chicken and serve on bed of fluffy rice with a crispy side salad.
