Chicken Pasta Toss
Ingredients
- 16 ounce Penne Pasta
- 4 x Boneless, skinless chicken breasts, cut in bite-sized pcs
- 4 Tbsp. Extra virgin olive oil, (from jar of sun-dry tomatoes)
- 3 x Cloves Garlic, chopped
- 1 tsp Salt
- 1 tsp Garlic Pwdr
- 1 Tbsp. Fresh Basil, minced
- 1 Tbsp. Fresh Oregano, minced
- 1 c. Sun-dry Tomatoes, liquid removed and julienned Parmesan Cheese, grated
Directions
- Cook and drain pasta as directed on the manufacturer's packaging.
- Reserve.
- While pasta is cooking, in a 5-qt pot, heat extra virgin olive oil and saute/fry chicken with chopped garlic, salt, garlic pwdr, basil, and oregano till chicken is cooked (about 8 to 10 min, depending on the thickness of the pcs).
- Add in sun-dry tomatoes, and cook for another two min. Remove from heat and toss with pasta. Serve with grated Parmesan cheese if you like. Add in garlic bread and a green salad for a delicious complete meal.
