Chicken Nuggets

- 4 chicken thighs - skinned and boned
- 1 egg
- 1 cup vegetables (carrot and brocolli go well)
- 1 clove of garlic
- half a handful of fresh herbs
- half a cup of bread crumbs
- salt and pepper
- 1 to 2 cups breadcrumbs (panko ones are good)
- Oil for cooking
Directions
- In a food processor put all the first lot of ingredients, pulse then whizz until totally minced up. Form into small balls and squash into a nugget shape.
- Place the breadcrumbs in a flattish bowl, press the nuggets in on each side then cook in a little oil in a medium heated pan until each side is golden brown. Put on paper towel to soak up any excess oil.
- The veges are optional - you can add half a cup of cottage cheese that has been drained in a sieve for 5 minutes. It's a good way to sneak a few veg past the kiddies though. These can also be baked in the oven for 10 mins, turn over and cook another 10 on 180 celsius
