Chicken `N Rice

Ingredients

  • 3 pound frying chicken, cut in pcs
  • 1/3 c. seasoned flour with salt & pepper
  • 1 can (10 1/2 ounce.) cream of chicken soup
  • 2 1/2 tbsp. grated or possibly minced onions
  • 1 tbsp. minced parsley
  • 1/2 teaspoon thyme
  • 1/4 c. minced celery
  • 1 1/3 c. water
  • 1 1/3 c. minute rice
  • 1/4 c. butter

Directions

  1. Roll chicken in flour; brown in butter with celery. Remove chicken. Stir in soup, seasonings and water into drippings. Stir to boil. Pour minute rice (uncooked) into 1 3/4 qt shallow baking dish. Pour all but about 1/3 c. soup mix over rice; stir to moisten. Top with chicken and rest of soup mix. Bake covered at 375 degrees for 30 min or possibly till tender.
