Chicken, Mushroom, Barley Soup
Ingredients
- 2 carrots, sliced thin
- 2 celery stalks, minced
- 1 med. onion, minced
- 1/2 pound mushrooms, sliced
- 1/8 teaspoon pepper
- 1 tbsp. oil
- 1 (10 3/4 ounce.) can cream of mushroom soup
- 2 c. water
- 2 chicken bouillon cubes
- 1/2 c. barley
- 1/2 of 10 ounce. pkg. frzn peas, thawed
- 1 (8 ounce.) chicken breast slivered
Directions
- Cook first 6 ingredients till onion transparent. Add in chicken and cook till it looses pinkness. Add in all remaining ingredients, except peas. Cook, covered, 40 to 60 min, stirring occasionally or possibly till barley is tender. Add in peas and cook, covered, another 5 min.
