  • Chicken Menudo with Oyster sauce

    This is the chicken version of my menudo for friends who do not eat pork. Hope you like it! ;)

    Ingredients

    • 1/2 kilo Chicken breast fillets
    • 1 med potato, cubed
    • 1 med carrot, cubed
    • 1 med green bell pepper, sliced quartered
    • 1 med red bell pepper, sliced quartered
    • 1 med onion, sliced
    • 2 med red tomatoes, diced
    • 2 cloves garlic, minced
    • 1/2 cup fresh green peas
    • 1/4 cup tomato sauce
    • 3 tbsp oyster sauce
    • 1 cup chicken broth
    • salt and pepper to taste
    • Canola oil

    Directions

    1. Rinse the chicken breast and cut into cubes.
    2. Heat a deep pan, add canola oil.
    3. Saute garlic, onion, tomatoes for a minute.
    4. Add the chicken and stir fry for a couple of minutes until the color changes.
    5. Add the oyster sauce, stir fry for another minute.
    6. Add potatoes, carrots, and peas. Stir to incorporate with the chicken.
    7. Add the bell peppers, salt and pepper to taste.
    8. Add the broth and let it simmer on medium heat.
    9. Add the tomato sauce once broth has reduced.
    10. Let it simmer and dry to your desired thickness of sauce.
    11. *I like it almost dry with just enough sauce to go around.
    12. Serve with steamed rice or bread.
