Chicken Menudo with Oyster sauce

- 1/2 kilo Chicken breast fillets
- 1 med potato, cubed
- 1 med carrot, cubed
- 1 med green bell pepper, sliced quartered
- 1 med red bell pepper, sliced quartered
- 1 med onion, sliced
- 2 med red tomatoes, diced
- 2 cloves garlic, minced
- 1/2 cup fresh green peas
- 1/4 cup tomato sauce
- 3 tbsp oyster sauce
- 1 cup chicken broth
- salt and pepper to taste
- Canola oil
Directions
- Rinse the chicken breast and cut into cubes.
- Heat a deep pan, add canola oil.
- Saute garlic, onion, tomatoes for a minute.
- Add the chicken and stir fry for a couple of minutes until the color changes.
- Add the oyster sauce, stir fry for another minute.
- Add potatoes, carrots, and peas. Stir to incorporate with the chicken.
- Add the bell peppers, salt and pepper to taste.
- Add the broth and let it simmer on medium heat.
- Add the tomato sauce once broth has reduced.
- Let it simmer and dry to your desired thickness of sauce.
- *I like it almost dry with just enough sauce to go around.
- Serve with steamed rice or bread.
