  • Chicken Loaves With Marsala Mushroom Sauce

    Ingredients

    • 1 sm Onion, minced fine
    • 2 Tbsp. Extra virgin olive oil
    • 2 lb Grnd chicken
    • 1 x Celery ribs, minced fine
    • 1/4 c. Chopped fresh parsley
    • 1 1/2 tsp Chopped garlic
    • 2 lrg Large eggs
    • 1/4 c. Lowfat milk
    • 1/4 c. Grated Parmesan cheese
    • 1/2 c. Fresh bread crumbs
    • 6 x Garlic cloves, coarsely minced
    • 1/4 c. Extra virgin olive oil
    • 1 c. Sliced mushrooms
    • 1 c. Marsala wine
    • 1 c. Low sodium chicken broth
    • 2 Tbsp. Unsalted butter

    Directions

    1. Prepare chicken loaves:
    2. 1. In a saucepan cook onion in oil over moderate heat, stirring occasionally, till softened, and cold. In a large bowl combine well chicken, celery, parsley, garlic, Large eggs, lowfat milk, cheese, bread crumbs, and onion mix. Cover mix and refrigerate1 hour.
    3. 2. Divide chicken mix into 5 equal portions and form into small loaves.
    4. 3. In a large deep skillet cook garlic in oil over moderate heat, stirring, till golden brown. Remove and throw away garlic. Add in chicken loaves and cook, turning once, till golden brown. Add in mushrooms and Marsala and cook till liquid is reduced by half. Add in chicken broth and cook, covered, 20 min, or possibly till meat thermometer inserted in center registers 170F. Transfer loaves to a platter and boil sauce till reduced by half. Whisk in butter and pour sauce over loaves.
    5. Serves 5 generously.
