Ingredients

  • 1 med onion, minced
  • 1/3 c. vegetable oil
  • 2 lb chicken livers
  • 1 1/2 lb mushrooms
  • 3 x bell pepper, sliced
  • 2 sm tomaot sauce, canned
  • 3/4 c. Chianti, wine
  • 4 Tbsp. soy sauce
  • 1/2 tsp salt freshly grnd black pepper, to taste
  • 1/2 tsp dry oregano, crumbled
  • 3 c. warm cooked rice

Directions

  1. Saute/fry onions in oil till light brown.
  2. Add in livers cook till light in color. Was and pat dry mushrooms on paper towels. Slice. Add in mushrooms and peppers to pan. Add in tomato sauce, wine, and soy sauce. Season to taste. Add in oregano, simmer about 1/2 hour stirring occasionally.
  3. serve over warm rice.
