  • Chicken Fricassee With Parsley Dumplings

    Ingredients

    • 3 pound chicken, cut up (about 8 pcs)
    • Salt
    • Pepper
    • Paprika
    • 1 (10 3/4 ounce.) can condensed cream of chicken soup
    • 1 c. lowfat milk
    • Parsley Dumplings (recipe follows)

    Directions

    1. Cut each chicken breast half into halves. Arrange pcs, skin side up, with meatiest parts to outside edge in baking dish, 12" x 7 1/2" x 2". Sprinkle with salt and pepper. Sprinkle generously with paprika. Cover with waxed paper and microwave on HIGH for 10 min. Skim off fat if necessary. Mix soup and lowfat milk; spoon over chicken pcs. Rotate baking dish half turn. Cover with waxed paper and microwave on HIGH till thickest parts of chicken are done, 8 to 12 min longer. Prepare Parsley Dumplings. Drop by spoonfuls around edge of dish. Microwave, uncovered, on HIGH for 3 min. Rotate baking dish half turn. Microwave till dumplings are no longer doughy, 3 to 4 min longer.
