Ingredients

  • 3 x boned, skinned (4 ounce.) chicken halves, diced
  • 1 1/2 tsp curry pwdr
  • 1 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 cl garlic
  • 1/4 tsp chicken bouillon granules
  • 1/2 c. warm water
  • 3 Tbsp. water
  • 1 tsp oil
  • 1/2 tsp warm sauce
  • 1 1/2 c. sliced green onions
  • 1 Tbsp. flour
  • 1/2 tsp grnd cumin
  • 8 x manicotti shells
  • 8 ounce plain yogurt
  • 1 c. minced tomatoes

Directions

  1. Combine chicken, curry pwdr, paprika, salt, pepper, and garlic chopped in a medium bowl and toss well. Cover and refrigeratemix 1 hour. Dissolve bouillon in warm water. Set aside. Coat a large skillet with vegetable spray and add in oil and place over medium heat till warm. Add in chicken mix and cook 3 min, Stirring constantly. Add in green onions and cook 2 min Stir in flour and cook 1 min Gradually add in bouillon mix and cook 3 min Or possibly till thickened, stirring constantly.stuff each shell with about 1/2 c. Chicken mix. Arrange in a baking dish coated with spray. Cover and bake at 350 for 30 min Combine yogurt, tomatoes, water, cumin and warm sauce in a bowl.
  2. Spoon over manicotti. Serve hot.
