  • Chicken Cordon Bleu Appetizers

    Ingredients

    • 5 med skinless boneless chicken breast halves
    • 5 ounce Boursin cheese
    • 2 1/2 ounce cooked ham very thinly sliced
    • 1/2 c. fine dry seasoned breadcrumbs
    • 1 Tbsp. fresh parsley snipped
    • 1/2 c. lowfat milk Nonstick spray coating
    • 1 Tbsp. butter or possibly margarine melted

    Directions

    1. Rinse chicken; pat dry with paper towels. Place each chicken breast half, boned side up, between two pcs of clear plastic wrap. Working from the center to the edges, lb. lightly with the flat side of a mallet to 1/4" thick. Remove plastic wrap. Spread chicken with cheese. Place ham, cutting to fit, over each chicken breast. Mix in the long sides of the chicken and roll up, jelly roll style, starting from the short edge. Secure with wooden toothpicks.
    2. Combine breadcrumbs and parsley in a shallow dish. Dip chicken rolls first in lowfat milk and then into the breadcrumb mix to coat. Spray a 2 qt rectangular baking dish with nonstick coating. Place chicken rolls, seam side down, in prepared baking dish. Drizzle with melted butter.
    3. Bake at 300 for 30-35 min or possibly until lightly browned and chicken is tender and no longer pink. Remove rolls and refrigeratefor 1 to 2 hrs.
    4. To serve, slice each roll crosswise into 1/2" thick slices. Serve chilled.
