Ingredients

  • 2 c. diced, cooked chicken (okay to use more)
  • 2 c. uncooked elbow macaroni
  • 2 x (10 1/2 ounces) cans cream of mushroom soup
  • 1 can evaporated lowfat milk
  • 1 3/4 c. chicken broth
  • 1 sm onion, minced
  • 1 sm can water chestnuts, liquid removed and sliced
  • 1/2 lb shredded Cheddar cheese
  • 1/2 tsp salt

Directions

  1. Mix all ingredients in order given in large bowl. Put in well greased 9 x 13 inches pan. Cover with aluminum foil and chill overnight. Next day remove foil and bake at 350 degrees for 1 hour.
  2. Note: must be made one day ahead
