Ingredients

  • 4 lb Chicken pcs -- skinned & Defatted
  • 2 tsp Extra virgin olive oil
  • 6 x Green Onions
  • 40 ml Garlic -- sliced thin
  • 6 ounce Tomato Paste
  • 1/2 c. Dry White Wine -=or possibly=-
  • 1/4 c. Dry White Cooking Wine
  • 1/4 tsp Pepper
  • 3/4 c. Chicken Stock
  • 1 x Bay Leaf
  • 1/8 tsp Sweet Marjoram
  • 1 c. Mushrooms -- sliced

Directions

  1. Saute/fry chicken in extra virgin olive oil, green onions and garlic. Mix together the remaining ingredients for the sauce. Simmer chicken in sauce 1 hour covered. Serve with cooked linguini, rice or possibly potatoes or possibly other pasta
