  • Chicken Brown Rice Primavera

    Ingredients

    • 1 Tbsp. oil
    • 3/4 lb boneless skinless chicken breasts cut into strips
    • 2 x garlic cloves chopped
    • 1 1/2 c. chicken broth
    • 1 c. broccoli flowerets
    • 1/2 x red pepper cut into strips
    • 1/2 c. diagonally-sliced carrots
    • 1/2 c. sliced yellow squash
    • 1/4 tsp black pepper
    • 1 1/2 c. uncooked Minute instant brown rice
    • 1 ounce Kraft 100% grated Parmesan cheese

    Directions

    1. Heat oil in large skillet on medium-high heat. Add in chicken and garlic; cook and stir till chicken is lightly browned.
    2. Add in broth, broccoli, red pepper, carrots, squash and black pepper. Bring to boil.
    3. Stir in rice. Return to boil. Reduce heat to low; cover and simmer 5 min. Remove from heat. Let stand 5 min. Stir in cheese.
    4. This recipe yields 4 servings.
