Chicken Brown Rice Primavera
Ingredients
- 1 Tbsp. oil
- 3/4 lb boneless skinless chicken breasts cut into strips
- 2 x garlic cloves chopped
- 1 1/2 c. chicken broth
- 1 c. broccoli flowerets
- 1/2 x red pepper cut into strips
- 1/2 c. diagonally-sliced carrots
- 1/2 c. sliced yellow squash
- 1/4 tsp black pepper
- 1 1/2 c. uncooked Minute instant brown rice
- 1 ounce Kraft 100% grated Parmesan cheese
Directions
- Heat oil in large skillet on medium-high heat. Add in chicken and garlic; cook and stir till chicken is lightly browned.
- Add in broth, broccoli, red pepper, carrots, squash and black pepper. Bring to boil.
- Stir in rice. Return to boil. Reduce heat to low; cover and simmer 5 min. Remove from heat. Let stand 5 min. Stir in cheese.
- This recipe yields 4 servings.
