Chicken Broccoli Casserole

Tender chicken, fresh broccoli, creamy cheese, and hearty rice... a great family dinner or covered-dish offering.

Ingredients

  • 1 cup uncooked white rice (not instant)
  • 2 cups water
  • 2 boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 2 cups broccoli, chopped
  • 1 10-oz can condensed broccoli cheese soup
  • 10 oz milk
  • 2 cups shredded cheddar cheese

Directions

  1. Bring water to a boil. Add rice; cook for 12 - 15 minutes or until water is absorbed and rice is tender.
  2. While rice is cooking, heat olive oil in a large skillet and saute chicken until meat turns white and is cooked through.
  3. Put cooked rice in casserole dish.
  4. Stir soup and milk (use the empty soup can to measure) into cooked rice.
  5. Spread half the rice mixture in a casserole pan.
  6. Layer half of the chicken, broccoli, and cheese on top of rice.
  7. Repeat layers using the rest of the ingredients.
  8. Bake at 325 for 20 - 25 minutes.
