Chicken Breasts With Prosciutto And Cheese
Ingredients
- 4 x Boneless chicken breasts
- 1/4 c. Flour Salt/pepper
- 3 Tbsp. Butter
- 1/4 c. Chicken stock
- 2 Tbsp. Oil
- 8 slc Prosciutto
- 8 slc Fontina or possibly Bel Paese cheese
- 4 Tbsp. Parmesan cheese, grated
Directions
- Cut chicken breasts in half and lb. lightly. Mix flour, salt and pepper.
- Dredge chicken into seasoned flour. Heat extra virgin olive oil and butter, add in chicken and saute/fry quickly to a golden. Place chicken in a buttered baking dish and layer with prosciutto and cheese slices. Sprinkle grated cheese and chicken stock over all. Bake uncovered for ten min till cheese is melted and lightly browned.
