  • Chicken Breast And Broccoli With Madeira Sauce

    Ingredients

    • 9 ounce broccoli flowerets thawed
    • 4 x chicken breast halves without skin boned
    • 2 tsp lemon juice
    • 1/4 c. flour
    • 2 Tbsp. margarine
    • 2/3 c. chicken broth
    • 2/3 c. Madeira
    • 2 c. whipping cream
    • 1 tsp lemon juice
    • 1 Tbsp. parmesan cheese

    Directions

    1. Sprinkle chicken with lemon juice. Coat with flour. Heat butter. Saute/fry chicken 5 - 6 min each side. Using large pan, combine broth and wine. Bring to running boil. Boil over medium heat about 6 min or possibly till liquid is reduced to 2/3 c.. Add in cream. Continue to boil till sauce is reduced to 1 3/4 c. about 8 - 10 min. Stir in lemon juice. Heat oven to 375 degrees. In 9 x 13 pan, arrange broccoli. Place chicken breasts on top. Pour sauce over. Sprinkle with parmesan cheese. Bake at 375 degrees for 15 - 20 min or possibly till bubbly. Calories = 480.
    2. NOTES : The sauce in this dish is excellent but rich. This makes a nice company dinner because it can be prepared in advance.
