Chicken And Spinach Focaccia Melt
Ingredients
- 2 Tbsp. lemon juice
- 1 Tbsp. extra virgin olive oil
- 1 tsp MAGGI Garlic stock pwdr
- 1 tsp dry oregano
- 2 Tbsp. minced fresh mint or possibly 1 tsp. dry mint
- 300 gm boneless chicken, skinned and cut into thin strips
- 2 tsp extra virgin olive oil
- 1 pkt MAGGI Pizza Sauce Mix Boiling water
- 1 lrg focaccia loaf
- 1/2 c. cooked spinach, well liquid removed
- 1 1/2 c. grated mozzarella cheese or possibly tasty cheese
Directions
- Combine all the marinade ingredients.
- Add in the chicken and mix well.
- Cover and chill for 30 min.
- Heat the 2 tsp. extra virgin olive oil in a frying pan.
- Drain the chicken and add in to the pan.
- Cook till the chicken is golden and cooked. Remove the chicken and set aside.
- Make up the sauce mix following the packet directions.
- Cut the focaccia bread in half horizontally and place, cut side up on an oven tray.
- Spread the cut surfaces with the pizza sauce, then cover with the spinach and chicken.
- Top with the grated cheese.
- Cook in a preheated oven, 200 C, for 15-20 min or possibly till the topping is thoroughly heated.
