Chicken And Shrimp Gumbo (Creole)
Ingredients
- 5 lb Stewing hen, cut up
- 1/2 c. Shortening
- 1 c. Minced onion
- 1/2 c. Minced fresh parsley
- 1/2 tsp Pepper
- 2 lb Uncooked shrimp
- 1/2 c. Minced green onion
- 3 1/2 tsp Salt
- 1/2 c. Flour
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. Lemon juice
- 1/2 tsp Thyme
- 1/2 c. Minced celery
- 1 tsp File pwdr
Directions
- Sprinkle chicken with 1.5 tsp of salt. Heat shortening in a large heavy pot. Add in chicken pcs; brown, turning on all sides, for about 15 min Remove chicken.
- Stir flour into warm fat in wich chicken was browned. Stir constantly, keeping heat low, till flour is dark brown. Add in minced
