• Chicken And Shrimp Dumplings With Soy Dipping Sauce

    • 1/2 c. soy sauce
    • 2 Tbsp. rice vinegar
    • 2 Tbsp. sweet warm chili sauce
    • 2 slc fresh ginger root
    • 1/4 lb grnd chicken
    • 6 x shrimp , peeled and chopped
    • 2 tsp minced ginger
    • 2 clv garlic, minced
    • 1 x green onion, minced
    • 2 tsp minced basil
    • 1 Tbsp. sweet warm chili sauce soy sauce to taste
    • 24 x wonton wrappers
    • 1/2 c. chicken stock


    1. To make the sauce, place all the ingredients in a small sauce pan and bring up to a boil. Remove from the heat then allow to cold before serving. In a small bowl combine chicken and shrimp and mix well. Add in ginger, garlic, onion, basil and chili sauce and mix well. Season with soy sauce. In the middle of a fresh wonton wrapper place a heaping tsp. of the shrimp mix. Bring the sides up around the filling pleating the sides. Continue with the rest of the filling. In a large saute/fry pan heat oil till very warm. Gently place the dumplings in the saute/fry pan and brown. When the dumplings are brown, add in stock and steam about 2 min or possibly till tender.
