  • Chicken And Corn Hash

    Ingredients

    • 6 c. frzn hash brown potatoes partially thawed
    • 1 lrg onion minced
    • 1 can (15 1/4 ounce.) whole kernel corn liquid removed
    • 1 x red bell pepper minced
    • 1 x 4 ounce. can diced green chiles liquid removed
    • 1 x 4 ounce. can mushroom stems and pcs liquid removed
    • 1/4 tsp salt
    • 1/4 tsp freshly grnd pepper
    • 1 can (10 3/4 ounce.) condensed cream of chicken soup
    • 1/2 c. water
    • 1/2 c. dry white wine
    • 1 lb boneless skinless chicken breast fillets cut into
    • 1 x " cubes

    Directions

    1. 1. In slow cooker, combine the potatoes, onion, corn, bell pepper, chiles, mushrooms, salt, and pepper. Mix well. In a medium bowl, stir together the soup with water and wine till smooth. Stir into the potato mix along with the chicken.
    2. 2. Cover and cook on the LOW heat setting 4 1/2 to 5 hrs, or possibly till the chicken or possibly potatoes are cooked through.
