Chicken And Corn Hash
Ingredients
- 6 c. frzn hash brown potatoes partially thawed
- 1 lrg onion minced
- 1 can (15 1/4 ounce.) whole kernel corn liquid removed
- 1 x red bell pepper minced
- 1 x 4 ounce. can diced green chiles liquid removed
- 1 x 4 ounce. can mushroom stems and pcs liquid removed
- 1/4 tsp salt
- 1/4 tsp freshly grnd pepper
- 1 can (10 3/4 ounce.) condensed cream of chicken soup
- 1/2 c. water
- 1/2 c. dry white wine
- 1 lb boneless skinless chicken breast fillets cut into
- 1 x " cubes
Directions
- 1. In slow cooker, combine the potatoes, onion, corn, bell pepper, chiles, mushrooms, salt, and pepper. Mix well. In a medium bowl, stir together the soup with water and wine till smooth. Stir into the potato mix along with the chicken.
- 2. Cover and cook on the LOW heat setting 4 1/2 to 5 hrs, or possibly till the chicken or possibly potatoes are cooked through.
