CHICKEN AFRITADA
Ingredients
- 3 cloves garlic
- 1 medium size red onion
- 3 medium sized ripe tomatoes
- 1/2 kilo pre-cut chicken
- 1 cup water or chicken stock (unsalted)
- Salt and pepper to taste
- 3 medium sized potatoes
- 1 small carrots
- 1/2 cup evaporated milk
- 200 gms. pineapple tidbits
- 100 ml tomato sauce
- 1/4 cup grated cheese (optional)
Directions
- Saute garlic, onion and tomatoes in 1 tbsp. oil in a medium heat pan. Cook until tomatoes turn soft.
- After washing and draining chicken put it in the pan together with the sauteed garlic onion and tomatoes. Put salt and pepper according to taste. Pour 1 cup water or chicken stock and cover pan and let it simmer for 3 minutes.
- Put potatoes and carrots together with tomato sauce. Cover pan until potatoes and carrots are tender.
- Put milk and cheese and let it simmer for another 5 mimutes then serve.
- Best serve with steamed rice.
