    Ingredients

    • 3 cloves garlic
    • 1 medium size red onion
    • 3 medium sized ripe tomatoes
    • 1/2 kilo pre-cut chicken
    • 1 cup water or chicken stock (unsalted)
    • Salt and pepper to taste
    • 3 medium sized potatoes
    • 1 small carrots
    • 1/2 cup evaporated milk
    • 200 gms. pineapple tidbits
    • 100 ml tomato sauce
    • 1/4 cup grated cheese (optional)

    Directions

    1. Saute garlic, onion and tomatoes in 1 tbsp. oil in a medium heat pan. Cook until tomatoes turn soft.
    2. After washing and draining chicken put it in the pan together with the sauteed garlic onion and tomatoes. Put salt and pepper according to taste. Pour 1 cup water or chicken stock and cover pan and let it simmer for 3 minutes.
    3. Put potatoes and carrots together with tomato sauce. Cover pan until potatoes and carrots are tender.
    4. Put milk and cheese and let it simmer for another 5 mimutes then serve.
    5. Best serve with steamed rice.
