• Chicken Adobo (Adobong Manok)

    • 1 x Chicken ( 3lbs) pcs
    • 1/2 c. Soy Sauce
    • 3/4 c. White Vinegar
    • 1 x Heads Garlic (more if pref)
    • 2 x Bay Leaves
    • 1/2 Tbsp. Peppercorns x Salt (to taste)


    1. Boil Chicken with soy sauce, vinegar, garlic, bay leaves and peppercorns and simmer for half an hour. Remove the chicken pcs from the pot and broil them in a pan for 10 min. Let the sauce in the pot boil till it is reduced by half. Add in salt to taste. Cover the broiled chicken pcs with the sauce. Serve warm.
    2. Serve with rice.
    3. Note: I find this dish doesn't need any salt as the soy sauce is salty sufficient. I also remove the chicken skins. Mark Soennichsen
