Chicken Adobo

I really can't imagine an easier recipe...and gives an amazing return for very little effort. I've never had whole pieces of chicken made adobo style before, but it was excellent. This is also very kid friendly. One of our sons ate 4 drumsticks! Ingredients
- 3 pounds chicken thighs or legs, skinless, cut in half with bone
- 1/2 cup white vinegar
- 1/2 cup soy sauce
- 1 teaspoon brown sugar
- 2 Tablespoon Peppercorns, crush about half
- 5 cloves garlic, crushed
- 3 bay leaves
- kosher salt to taste
Directions
- Combine all ingredients in a pan, cover and marinate 1 to 3 hours.
- Bring to a boil then lower heat to simmer for about 30 minutes.
- Remove cover and simmer for another 15 minutes, or until much of the liquid has evaporated and the chicken is lightly brown .
