  • Chicago/Italian Fried Zucchini

    My interpretation of zucchini ,as cooked in a wonderful old Italian neighborhood restrauant downtown. How I wanna go back there!

    Ingredients

    • 2 Plump, long zucchini
    • 1/2 cup flour
    • Salt and Pepper
    • 1/4 tsp. "Italian "seasoning, if you like
    • 1/4 to 1/2 cup cooking oil of choice. I use peanut oil.
    • 1 beaten egg or egg white or 1/2 cup water
    • Small bowl of marinara sauce on the side or salad dressing such as ranch. Whatever suits you.

    Directions

    1. Peel zucchini. Cut lengthwise in long, flat, thin strips.
    2. Add seasonings of choice to flour.
    3. Heat oil in non stick 10' pan to medium high.
    4. Dip zucchini in either water or beaten egg.
    5. Dredge zucchini strips in seasoned flour.
    6. Fry quickly and take out as soon as zucchini browns. Drain on paper towels and serve with the marinara and/or salad dressing side dishs. Use as many side dish flavors as you like. I love ranch with this.
