    I've discovered Chia seeds lately. Full of protein and a good source of Fibre? I'm In. My Mother used to make Surprise Muffins Which is a basic Muffin recipe then filled with Jam. I used Raspberry in Mine. I like to add a touch of Vanilla in with my Muffin recipe for a nice hint of Vanilla to go with the raspberry Another Fun thing. i use light Vanilla soy milk in place of milk and extra virgin olive oil in place of the butter

    Ingredients

    • 2 cups flour ( 1 Cup White and 1 cup brown or both white)
    • 1-1/3 Tablespoons baking powder
    • 3/4 teaspoon salt
    • 2 Tablespoons sugar
    • 1/4 Cup Chia Seeds
    • 1 egg
    • 1 Cup milk
    • 1/4 Cup melted butter
    • 1 Tbsp Vanilla
    • Raspberry or other Type of Jam. Apple jelly is amazing

    Directions

    1. preheat oven to 350 degrees
    2. Lightly Grease Muffin tin
    3. Combine your first 5 ingredients add the remaining ingredients except the jam
    4. Stir quickly, just until all flour is moistened.
    5. Fill muffin tins 1/4 full. add a small scoop of jam to each tin. keeping it to the Middle. Top them with the rest of the batter til they are 3/4 full.
    6. Bake for 25 Minutes or til Golden
