Chia Seeds Pudding Snack Gluten and Dairy Free

- 4 tbsp Chia Seeds
- 2 cups non-dairy milk
- 1 tsp vanilla essense
- 1 tsp coconut nectar (sweetener)
- 1⁄2 tsp cinnamon
- 1 Banana (optional)
- 1⁄2 cup coconut cream (optional)
Directions
- Quick and Easy — simply mix the Chia seeds, milk, vanilla, coconut nectar and cinnamon in a drink shaker and pour in to 4 individual servings then refrigerate for 1 hour.
- Or – blend all ingredients including banana and coconut cream, but leave out the Chia seeds. Add Chia seeds and liquid mix to a drink shaker and shake well before pouring into the individual serves and refrigerate.
- VARIATIONS
- Try different fruit flavours. Blueberries are great and apple works well also.
- You can also add some chopped nuts, cacao nibs or desiccated coconut depending on your mood!
