  • Chewy Apple Brownies

    Ingredients

    • 2 stk margarine, softened
    • 1 3/4 c. Granulated sugar
    • 2 lrg Large eggs, well beaten
    • 1 tsp Pure vanilla extract
    • 2 c. All-purpose flour
    • 1 tsp Baking pwdr
    • 1 tsp Baking soda
    • 1 tsp Cinnamon
    • 1/2 tsp Salt
    • 2 med Baking apples, peeled, cored, minced
    • 1/2 c. Minced pecans
    • 1/2 c. Confectioners' sugar
    • 1 Tbsp. Warm water
    • 1/4 tsp Vanilla extract

    Directions

    1. 1. Heat oven to 350 degrees. Grease a 9-inch square baking pan; set aside.
    2. 2. Beat margarine, granulated sugar, Large eggs and vanilla in large bowl of electric mixer till light and fluffy. Combine dry ingredients and add in to egg mix. Mix till flour is moistened; mix in apples and nuts.
    3. 3. Spread into prepared pan. Bake till a toothpick inserted in the center comes out clean, about 45 min. Cold on wire rack.
    4. 4. For glaze, combine glaze ingredients and mix till smooth. Drizzle over cooled brownies in a thin stream, forming a woven pattern. Let glaze set before cutting brownies. Serve brownies hot with frzn yogurt or possibly at room temperature. Kay Fitzgerald, Wind Lake, Wis. The chewy texture which gives these unusual brownies their name is, unfortunately, fat-dependent.
    5. However, I found which by adding some oats to the dry mix I was able to achieve satisfactory results. I used applesauce to replace some of the fat, and toasted the nuts to give them more flavor so half the amount was plenty.
