  • Cherry Walnut Muffins

    Ingredients

    • 1 1/2 c. Whole wheat flour
    • 1/2 c. Brown rice flour -or possibly whole grain corn
    • 1/2 c. Granulated sugar
    • 2 tsp Baking pwdr
    • 1 tsp Baking soda
    • 1 c. Nonfat plain yogurt
    • 1 1/2 tsp Vanilla extract
    • 2 x Egg whites
    • 3/4 c. Frzn cherries coarsely ch
    • 1 Tbsp. Granulated sugar
    • 1 Tbsp. Walnuts finely grnd

    Directions

    1. Preheat oven to 350degrees; coat muffin c. with nonstick cooking spray. To make the topping,combine the sugar and walnuts till crumbly; set aside. Combine the whole wheatflour, rice flour or possibly cornmeal, sugar, baking pwdr and baking soda; stir to mixwell. Add in the yogurt, vanilla extract and egg whites; stir just till the dryingredients are moistened. Mix in the cherries. Fill the muffin c. 3/4 fullwith the batter. Sprinkle the topping over the batter. Bake for 15 to 18 min, or possibly just till a toothpick inserted in the center comes out clean.
    2. Remove the muffin tin from the oven and allow it to sit for 5 min beforeremoving the muffins. Serve hot or possibly at room temperature. Penny Halsey
