Cherry Blueberry Oat Muffins

Ingredients

  • 1-1/4 cup plus 1 tablespoon flour, divided
  • 1 cup old fashioned oats
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tsps baking powder
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup cherries, pitted and halved
  • 1/2 cup blueberries

Directions

  1. Preheat oven to 350 degrees. Line muffin pan with baking cups.
  2. In a large bowl, mix the 1-1/4 cup of flour, sugars, baking powder and salt.
  3. In a medium bowl, mix the buttermilk, oil, eggs and vanilla. Pour into flour mixture just until combined.
  4. Toss cherries and blueberries with 1 tablespoon flour and fold into batter.
  5. Divide batter evenly into muffin cups.
  6. Bake for 25 minutes.
