  • Cherry Almond Bars

    Ingredients

    • 1/2 c. unsalted butter, room temperature
    • 1/4 c. icing sugar
    • 1 dsh almond extract
    • 1/2 tsp vanilla extract
    • 1 1/4 c. all purpose flour
    • 2 Tbsp. grnd almond
    • 1/4 tsp salt Filling
    • 1 c. cherry jam
    • 1/2 tsp cinnamon
    • 2 Tbsp. sugar
    • 1 Tbsp. lowfat milk
    • 1 c. sliced almonds

    Directions

    1. Preheat oven to 350 F. Lightly grease and line an 8 x 8 inch pan with parchment paper.
    2. Cream together butter and sugar till smooth. Add in both extracts and blend in.
    3. In a separate bowl, blend flour, grnd almonds and salt. Add in to butter mix and blend (will be crumbly). Press crust into pan with fingers.
    4. Bake for 18-20 min, till just brown around the edge of the pan. Allow to cold.
    5. Filling:Stir together cherry jam and cinnamon and spread over surface of cooled crust.
    6. Heat together sugar and lowfat milk till sugar is dissolved. Pour over sliced almonds and toss to coat. Spread almonds over cherry filling.
    7. Bake for 15-18 min, till almonds turn golden.
    8. To Assemble:Cold completely before slicing.
