Cherry Almond Bars
Ingredients
- 1/2 c. unsalted butter, room temperature
- 1/4 c. icing sugar
- 1 dsh almond extract
- 1/2 tsp vanilla extract
- 1 1/4 c. all purpose flour
- 2 Tbsp. grnd almond
- 1/4 tsp salt Filling
- 1 c. cherry jam
- 1/2 tsp cinnamon
- 2 Tbsp. sugar
- 1 Tbsp. lowfat milk
- 1 c. sliced almonds
Directions
- Preheat oven to 350 F. Lightly grease and line an 8 x 8 inch pan with parchment paper.
- Cream together butter and sugar till smooth. Add in both extracts and blend in.
- In a separate bowl, blend flour, grnd almonds and salt. Add in to butter mix and blend (will be crumbly). Press crust into pan with fingers.
- Bake for 18-20 min, till just brown around the edge of the pan. Allow to cold.
- Filling:Stir together cherry jam and cinnamon and spread over surface of cooled crust.
- Heat together sugar and lowfat milk till sugar is dissolved. Pour over sliced almonds and toss to coat. Spread almonds over cherry filling.
- Bake for 15-18 min, till almonds turn golden.
- To Assemble:Cold completely before slicing.
