Cherimoya And Peach Soup
Ingredients
- 2 c. Minced cherimoya
- 1 c. Minced peaches, (canned w/syrup)
- 1 1/2 c. Lowfat sour cream
- 1/2 c. Pineapple juice
- 1/2 c. Orange juice
- 1/4 c. Lemon juice
- 1/4 c. Dry sherry
- 1 c. Peach liquid, (from can)
- 8 x Mint sprigs, (optional, for garnish)
Directions
- Combine cherimoyas, peaches and lowfat sour cream in a blender. Puree. Add in remaining ingredients, except mint, and blend until very smooth.
- Transfer to a bowl. Cover and refrigeratethoroughly for at least two hrs. Ladle into chilled bowls. Garnish with mint and serve.
- Serves8.
