Cheesy Squash Casserole
Ingredients
- 2 lb summer squash sliced
- 2 c. Cheddar cheese grated
- 1 x egg beaten
- 1/2 c. evaporated lowfat milk Salt and pepper to taste
- 1/2 c. cracker crumbs
Directions
- Preheat oven to 350 degrees. Cook squash in boiling salted water, drain and place in buttered casserole dish. Add in cheese and stir till smooth. Stir in egg, lowfat milk, salt, pepper and cracker crumbs. Bake for 30 min.
