Cheesy Spinach Rice

- 2 cups long grain rice
- 4-1/2 cups water
- 2 cups fresh baby spinach, chopped
- 1 cup mild cheddar cheese, shredded
- 1/8 cup onion, finely chopped
- 1 garlic clove, finely chopped
- 2 tbsp fresh cilantro, finely chopped
- 1 tsp pepper
- 1 tsp chili powder
- sea salt to taste
- olive oil for pre-cooking rice
Directions
- Saute rice, garlic, and onion in olive oil in large saucepan until rice just begins to brown.
- Quickly and carefully add water to rice mixture.
- Add spinach, cilantro, and spices.
- When mixture boils, reduce heat and cover.
- Simmer for 15 minutes or until rice is tender and water is absorbed.
- Fluff rice with a fork and gently stir in shredded cheddar cheese.
- Allow to sit for 5 minutes, covered, before serving in order for cheese to melt.
