  • Cheesy Spinach Rice

    Lightly seasoned rice, tender baby spinach, and mild cheddar cheese in a delicious casserole.

    Ingredients

    • 2 cups long grain rice
    • 4-1/2 cups water
    • 2 cups fresh baby spinach, chopped
    • 1 cup mild cheddar cheese, shredded
    • 1/8 cup onion, finely chopped
    • 1 garlic clove, finely chopped
    • 2 tbsp fresh cilantro, finely chopped
    • 1 tsp pepper
    • 1 tsp chili powder
    • sea salt to taste
    • olive oil for pre-cooking rice

    Directions

    1. Saute rice, garlic, and onion in olive oil in large saucepan until rice just begins to brown.
    2. Quickly and carefully add water to rice mixture.
    3. Add spinach, cilantro, and spices.
    4. When mixture boils, reduce heat and cover.
    5. Simmer for 15 minutes or until rice is tender and water is absorbed.
    6. Fluff rice with a fork and gently stir in shredded cheddar cheese.
    7. Allow to sit for 5 minutes, covered, before serving in order for cheese to melt.
