  • Cheesy Scones

    A beautiful Sunday morning...woke up early, sipped my black tea and set the oven to heat up. The menu -Cheesy Scones with Raspberry Jam and luscious dollops of Chantilly Cream.

    Ingredients

    • For the scones-
    • Flour 250 gm
    • Baking soda 10 gm
    • Milk 172 ml
    • Butter 42 gm
    • Cheddar cheese 1/2 cup
    • Salt a pinch
    • For Chantilly Cream-
    • Whipping cream 1 cup
    • Castor sugar 4 tbspn
    • Vanilla extract to taste

    Directions

    1. Set the oven to 170 deg C.
    2. Sieve the flour and baking soda and keep aside.
    3. Rub the cold butter in the flour until it resembles bread crumbs.
    4. Add the salt and milk and knead lightly.
    5. Lastly add the cheese and fold in the dough.
    6. Please note not to work the dough too much.
    7. Rest the dough for 10 mins, before rolling and cutting.
    8. Roll out the dough into 1 inch thickness and cut into rounds with cookie cutter.
    9. Place on a greased tray and brush the top either with egg-wash (egg and milk) or plain milk.
    10. Bake for 15-20 mins and serve warm.
    11. CHANTILLY CREAM-
    12. Whip all the ingredients together until medium peaks.
    13. Keep chilled.
    14. Variation:
    15. Add bacon or ham for meaty scones.
    16. Cheese can be substituted for 50 gm of sultanas and 40 gms of Castor sugar.
    17. Add any herb to make a green scones to be served with herb butter.
