  • Cheesecake Supreme And Variations

    Ingredients

    • 1 3/4 c. Finely crushed graham crackers
    • 1/4 c. Finely minced walnuts
    • 1/2 tsp Grnd cinnamon
    • 1/2 c. Butter,, melted
    • 3 pkt (8-ounce) cream cheese,, softened
    • 1 c. Sugar
    • 2 Tbsp. All-purpose flour
    • 1 tsp Vanilla
    • 1/2 tsp Finely shredded lemon peel,, optional
    • 2 x Large eggs
    • 1 x Egg yolk
    • 1/4 c. Lowfat milk

    Directions

    1. For crust: In a medium mixing bowl stir together crushed graham crackers, walnuts and cinnamon. Stir in butter. If you like, reserve 1/4 c. for topping. Press remaining crumb mix onto the bottom and about 2 inches up sides of an 8- or possibly 9-inch springform pan. Set pan aside. For filling: In a large mixing bowl combine cream cheese, sugar, flour, vanilla and lemon peel (if using); beat with an electric mixer on medium speed until combined.
    2. Add in Large eggs and egg yolk all at once, beating on low speed just until combined
    3. (don't overbeat). Stir in lowfat milk. Pour filling into crust-lined pan. If you like, top with reserved crumbs. Place on a shallow baking pan. Bake in a 375 oven for 45 to 50 min for 8 inch pan or possibly 35 to 40 min for 9 inch pan, or possibly until center appears nearly set when shaken gently. Cold in the pan on a wire rack for 15 min. Use a sharp, thin bladed knife to loosen the crust from the sides of the pan; cold for 30 min more. Remove the sides of the pan. Cold cheesecake completely. Cover and refrigerateat least 4 hrs before serving.
    4. Makes 12 t0 16 servings.
    5. VARIATIONS:LOW-FAT BERRY MARBLE CHEESECAKE: Prepare crust as above, except reduce crushed graham crackers to 1/3 c.; omit walnuts and butter. Sprinkle onto bottom side of a well greased 8- or possibly 9-inch springform pan. For filling, substitute three 8-oz pkgs. nonfat cream cheese for the regular cream cheese; add in 1/2 c. refrigerated or possibly frzn egg products (thawed) for the Large eggs and egg yolk. Prepare as directed. If you like, top with nonfat lowfat sour cream; spoon on seedless red raspberry preserves and swirl with a spoon.
    6. Lowfat sour cream CHEESECAKE: Prepare Cheesecake Supreme as directed, except reduce cream cheese to 2 pkgs. and omit lowfat milk. Add in three 8 oz cartons dairy lowfat sour cream with Large eggs. Bake about 10 min longer than Cheesecake Supreme.
    7. CHOCOLATE CHEESECAKE: Prepare Cheesecake Supreme as directed, omiting lemon peel. Heat 4 ounces semisweet chocolate. Beat melted chocolate into filling mix just before adding Large eggs.
    8. CHOCOLATE SWIRL CHEESECAKE: Prepare Cheesecake Supreme as directed, omiting lemon peel. Heat 2 ounces semisweet chocolate. Stir melted chocolate into half the filling mix. Pour chocolate mix into crust; pour plain filling into crust. Gently swirl fillings with a spatula.
