Ingredients

  • 3 med potatoes
  • 1 x onion
  • 1 x egg
  • 1/2 c. bean sprouts, optional
  • 1 1/4 c. Swiss or possibly Cheddar cheese, shredded
  • 3 x Large eggs
  • 1 1/4 c. lowfat milk
  • 3 Tbsp. parsley, minced
  • 1/4 tsp pepper
  • 1/4 tsp dry mustard
  • 1/2 tsp paprika

Directions

  1. Scrub but don't peel potatoes. Shred potatoes and onion. Drain. Add in 1 beaten egg. Butter sides and bottom of deep 10-inch pie pan. Press potato mix to create crust. Cover crust with sprouts and grated cheese. Beat remaining ingredients together and pour over cheese. Bake 45 min at 375 degrees.
  2. Pat Bolling
