    Cheese 'n Black Bean Enchiladas

    Yum-cheese-tortillas-sauce, great lunch or light supper.

    Ingredients

    • 4 - 8' flour Tortillas
    • 1 cup cooked Black Beans
    • 1 cup Mexican Blend finely shredded cheese-divided use
    • 10 ounce can Rotel (tomatoes with green chiles)
    • one teaspoon smoked paprika
    • one teaspoon cumin
    • one teaspoon black pepper
    • 1/2 teaspoon onion salt

    Directions

    1. Pre Heat Oven 375 F
    2. In a saute pan ad black beans, Rotel, seasonings on medium heat, cook together for 5-6 minutes, add 1/4 of Mexican cheese blend, stir to combine, remove from heat source.
    3. Lay flour tortillas on a clean work surface. Add saute pan ingredients in the center of each tortilla, fold ends and roll up, place seam side down in a baking dish, add remaining sauce to the top of filled enchiladas, add 1/4 of the Mexican cheese on top, Bake 10 minutes.
    4. Remove from oven and garnish with remaining cheese blend.
    5. Serve and enjoy!
