Cheese 'n Black Bean Enchiladas

- 4 - 8' flour Tortillas
- 1 cup cooked Black Beans
- 1 cup Mexican Blend finely shredded cheese-divided use
- 10 ounce can Rotel (tomatoes with green chiles)
- one teaspoon smoked paprika
- one teaspoon cumin
- one teaspoon black pepper
- 1/2 teaspoon onion salt
Directions
- Pre Heat Oven 375 F
- In a saute pan ad black beans, Rotel, seasonings on medium heat, cook together for 5-6 minutes, add 1/4 of Mexican cheese blend, stir to combine, remove from heat source.
- Lay flour tortillas on a clean work surface. Add saute pan ingredients in the center of each tortilla, fold ends and roll up, place seam side down in a baking dish, add remaining sauce to the top of filled enchiladas, add 1/4 of the Mexican cheese on top, Bake 10 minutes.
- Remove from oven and garnish with remaining cheese blend.
- Serve and enjoy!
