• Cheese And Vegetable Quiche

    • 3/4 c. Lowfat cottage cheese
    • 8 ounce Carton, frzn egg Substitute, thawed
    • 1/3 c. Skim lowfat milk
    • 2 Tbsp. Minced fresh basil
    • 1/4 tsp Freshly grnd pepper
    • 1 Tbsp. Extra virgin olive oil
    • 1 1/2 c. Peeled, diced potatoes
    • 1/2 c. Sliced green onions
    • 10 ounce Package frzn minced Broccoli, thawed and Well liquid removed
    • 1/2 c. Minced sweet red pepper Vegetable cooking spray


    1. Place cottage cheese in container of an electric blender or possibly food processor, top with cover and process till smooth. Add in egg substitute, lowfat milk, basil and pepper; process till smooth. Set aside. Pour oil in a large nonstick skillet; place of medium heat till warm. Add in potatoes and green onions; saute/fry 10 min. Add in broccoli and red pepper; saute/fry an additional 4 min or possibly till vegetables are crisp-tender. Place vegetable mix in a 10-inch quiche dish which has been coated with cooking spray. Pour egg substitute mix over vegetables. Bake at 350F for 50 min or possibly till set. Let stand 10 min before slicing into wedges.
