  • Cheese And Vegetable Pie And/Or Empanadas

    Ingredients

    • 8 ounce Flour
    • 4 ounce Unsalted butter
    • 2 ounce Ice-cool water
    • 8 ounce Ricotta cheese
    • 2 ounce Cheddar cheese, diced
    • 4 ounce Mozzarella, diced
    • 4 ounce Mushrooms, minced
    • 2 ounce Onion, minced
    • 2 ounce Celery, minced
    • 2 ounce Peppers, minced
    • 2 ounce Carrots, shredded
    • 2 ounce Pecans, minced
    • 2 Tbsp. Cilantro, minced
    • 2 Tbsp. Parsley, minced
    • 2 whl Large eggs Salt and pepper
    • 4 ounce Black olives, minced, optional
    • 8 ounce Plain yogurt
    • 3 Tbsp. Cilantro, minced
    • 3 Tbsp. Parsley, minced
    • 1 tsp Garlic, minced I small cucumber, peeled, seeded and shredded
    • 2 x Limes, Juice of Salt and pepper

    Directions

    1. In mixing bowl combine butter and flour till it looks like sand. Add in water and shape into a ball. Roll on a well-floured surface (1/8" thick) and cut into desired shape.
    2. Stuff with cheese-vegetable mix and bake at 375 degrees till golden. (10-15 minutes.)
    3. Cheese-Vegetable Filling:Mix all ingredients together and place in pie tin lined with dough and cover with additional dough or possibly, for empanadas, stuff into shaped pie dough. Finish in oven.
    4. Yogurt sauce for empanadas: Mix all ingredients together and serve with empanadas.
