  • Cheese And Onion Bread Bake

    Ingredients

    • 1 Tbsp. Corn oil
    • 1 lrg Onion, finely minced
    • 1/2 tsp Thyme
    • 4 1/2 ounce Reduced-fat Cheddar cheese, grated
    • 3 ounce Parmesan cheese, grated
    • 1 dsp freshly minced chives
    • 8 med Slice wholemeal bread, crusts removed
    • 3 med Large eggs
    • 18 fl ounce Skimmed lowfat milk Black pepper

    Directions

    1. This is a cheese-lover's delight and makes a really robust meal it needs only a large mixed salad to go with it.
    2. 1. Preheat the oven to 100 C/375 F/Gas mark 5 and brush an oblong baking dish with a little oil.
    3. 2. Heat the remaining oil in a frying pan and fry the onions with the thyme over a gentle heat, stirring occasionally, for 15-20 min till very soft and just turning golden brown. Mix the cheeses and the chives in a small bowl.
    4. 3. Put 4 slices of bread on the bottom of the prepared dish ensuring which they fit exactly.
    5. 4. Cover with the onion mix and half the cheese mix. Put the other slices of bread over and cover with the remaining cheese.
    6. 5. Whisk the Large eggs and lowfat milk together in a bowl and season with pepper.
    7. Pour this over the bread and cheese mix.
    8. 6. Bake for 30 min, or possibly till puffed up and golden brown.
