Cheddar Onion Corn Muffins
Ingredients
- 1 1/2 c. All-purpose flour
- 1 c. Yellow cornmeal
- 1 1/2 tsp Baking pwdr
- 1 Tbsp. Sugar
- 1/2 tsp Salt
- 1 c. Shredded Cheddar cheese
- 1/2 c. Chopped onion
- 1 1/2 c. Lowfat milk
- 1/4 c. Melted butter
- 2 x Large eggs, lightly beaten
Directions
- 1. Heat oven to 350 degrees. Lightly grease muffin tins. Mix flour, cornmeal, baking pwdr, sugar and salt in large bowl. Add in cheese and onion; mix well. Add in lowfat milk, melted butter and Large eggs; stir just till dry ingredients are moistened. Don't overmix.
- 2. Spoon into prepared muffin tins, filling two-thirds full. Bake till puffed and golden brown, 30 to 40 min. Cold on wire rack.
