Charred Red Onion And Balsamic Vinegar White Beans
Ingredients
- 1 lrg red onion sliced 1/2" thick and grilled
- 2 Tbsp. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
- 1/4 c. red wine
- 1/4 c. balsamic vinegar
- 3 c. white beans cooked
- 2 Tbsp. sliced green onions
- 1 Tbsp. minced fresh parsley
- 1 x recipe Emeril's Kicked Up Scampi (see recipe)
Directions
- To a warm, dry saute/fry pan, add in onions and char for 2 min. Add in extra virgin olive oil and season with salt and pepper. Continue to saute/fry for 3 min. Deglaze the pan with red wine and balsamic vinegar. Add in the white beans and saute/fry for 5 min. Check for seasoning. Finish with green onions and parsley and mix well.
- To serve: Spoon the beans into the center of 4 plates. Surround the beans with 4 Kicked Up Scampi and top with their caper and butter sauce
- This recipe yields 4 servings.
