  • Charleston Sweet Potato Pancake

    Ingredients

    • 1 Tbsp. Cornstarch
    • 1/2 tsp Minced fresh thyme leaves
    • 1/2 tsp Salt
    • 1/4 tsp Coarsely grnd black pepper
    • 2 lb Sweet potatoes, peeled and thinly sliced
    • 1 lb Rome Beauty apples, peeled cored, and thinly sliced
    • 4 Tbsp. Margarine or possibly butter Fresh thyme sprigs, for optional garnish

    Directions

    1. 1. In c., mix cornstarch, thyme, salt, and pepper.
    2. 2. In large bowl, toss sweet potatoes and apples with cornstarch mix.
    3. Then, toss with 3 Tbsp. melted margarine or possibly butter.
    4. 3. Heat nonstick 10-inch skillet till very warm over medium heat. Add in remaining 1 Tbsp. margarine or possibly butter. When melted, spoon potato mix into skillet; pat to an even thickness. Cook, covered, 18 to 20 min, till potatoes and apples are tender. Uncover skillet; cook 2 min longer.
    5. 4. Remove skillet from heat. Place large serving plate over top of skillet.
    6. Quickly turn skillet upside down to invert pancake. Replace any pcs on top of pancake which may have stuck to skillet. Garnish with thyme sprigs if desired.
    7. BUSY COOK'S TIP: This dish is best made just before serving, but if you're pressed for time, make it up to 2 hrs in advance and then reheat, loosely wrapped, in foil.
