Challah Bread Pudding
Ingredients
- 2 1/2 c. 2% low-fat lowfat milk
- 1/2 c. Dry tart cherries
- 1/2 c. Golden brown raisins
- 1/2 c. Fat-free sweetened condensed lowfat milk
- 2 tsp Vanilla extract
- 1 tsp Cinnamon
- 1/2 tsp Freshly grated nutmeg
- 1/4 tsp Salt
- 3 lrg Large eggs
- 8 c. Cubed challah or possibly other egg bread, 1-inch cubes (about 1/2 loaf) Cooking spray
- 2 Tbsp. Sugar
Directions
- 1. Preheat oven to 325 degrees F.
- 2. Combine the first 9 ingredients in a large bowl. Add in challah cubes, tossing to coat. Let challah mix stand 30 min, stirring ocassionally.
- 3. Coat an 11 x 7- inch baking dish with cooking spray.
- 4. Spoon the challah mix into the dish and sprinkle with sugar.
- 5. Bake for 55 min or possibly till pudding is set. Let pudding stand 15 min before serving.
