Catfish With Cajun Brown Sauce

Ingredients

  • 4 x Catfish, (1 lb.) fillets
  • 1/3 c. Water
  • 1/4 c. Finely minced onion
  • 2 Tbsp. Butter
  • 2 Tbsp. Flour Fish cooking liquid plus water to make 3/4 c.
  • 1 can (8 ounce.) 1 c. tomato sauce
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp Salt
  • 1/4 tsp Dry oregano leaves
  • 1/4 tsp Dry thyme leaves
  • 1/4 tsp Garlic pwdr
  • 1/8 tsp White pepper
  • 1/8 tsp Cayenne pepper Warm cooked rice

Directions

  1. Arrange fish in single layer in 12 x 9 x 2 inch pan. Microwave safe dish, add in water. Cover tightly with plastic wrap, turning back corner to vent.
  2. Microwave 7 min or possibly till fish flakes easily with fork. Drain. Reserve liquid keep fish hot. Saute/fry onion in butter in medium sauce pan, stir in flour, cook over medium heat stirring constantly, till mix is medium brown about 8 min.
  3. Remove from heat. Stir in remaining ingredients (except rice). Heat to boiling, cook 1 minute more. Stirring constantly. Serve over cooked catfish and warm rice. A mighty tasty dish. Tiajuana, Oklahoma
