  • Cat Indian Pudding

    This wonderful pudding was handed down a couple of generations. Put vanilla ice cream on top and it is a real sweet tooth stopper and it is so good! I prefer it right out of oven when the spices are at the best.

    Ingredients

    • 4 cups milk (3 cups scalded)
    • 3/4 tsp. salt
    • 1/4 cup yellow corn meal
    • 2 Tbsp. quick tapioca
    • 2/3 cup brown sugar (or 1/2 cup molasses)
    • 1/2 tsp. ginger
    • 1/2 tsp. cinnamom
    • 2 Tbsp. butter

    Directions

    1. Preheat oven to 300. Butter casserole dish.
    2. Scald 3 cups of milk.
    3. When milk is scalded add salt, cornmeal, and tapioca gradually. Stirring until smooth and thickened.
    4. Add sugar, spices, and butter. Mix thoroughly.
    5. Put in casserole dish, pour 1 cup milk over top.
    6. Bake 3 hours, stirring occasionally.
