Cat Indian Pudding
This wonderful pudding was handed down a couple of generations. Put vanilla ice cream on top and it is a real sweet tooth stopper and it is so good! I prefer it right out of oven when the spices are at the best. Ingredients
- 4 cups milk (3 cups scalded)
- 3/4 tsp. salt
- 1/4 cup yellow corn meal
- 2 Tbsp. quick tapioca
- 2/3 cup brown sugar (or 1/2 cup molasses)
- 1/2 tsp. ginger
- 1/2 tsp. cinnamom
- 2 Tbsp. butter
Directions
- Preheat oven to 300. Butter casserole dish.
- Scald 3 cups of milk.
- When milk is scalded add salt, cornmeal, and tapioca gradually. Stirring until smooth and thickened.
- Add sugar, spices, and butter. Mix thoroughly.
- Put in casserole dish, pour 1 cup milk over top.
- Bake 3 hours, stirring occasionally.
